This flavour is a collaboration with Vanessa Breuer, a holistic chef who lives on a farmhouse in the Ibiza mountains. The combination comes from a family ritual: grinding carob from the garden with her children, adding figs and almonds from the trees around the house. That domestic, sun-baked quality comes through in the chocolate. It tastes warm and earthy rather than sharp or fruity.

Roasted almond butter makes up almost 40% of the filling, with dried fig, carob and a salt finish. Under 2g of sugar per square, date-sweetened, single-origin traceable cacao. We keep coming back to this one.
