Ella McKay left a corporate marketing career because dark chocolate had a reputation problem: bitter, serious, the 'healthy' choice nobody actually wanted for a treat. Fatso's answer is 150g slabs built for flavour first.

This one crisps up banana chips, gives them a glug of spiced rum, and finishes with a sprinkle of sea salt, the sweetness and salt doing the work that usually needs a cocktail glass, all wrapped in single-origin 60% dark Colombian chocolate.
