This is strawberry jam the way it tasted before sugar took over. Single Variety Co. uses British Sonata strawberries, a variety grown specifically for sweetness, and packs in far more fruit than most jam recipes call for, with less sugar to match.

A short cooking time keeps the colour vivid and the flavour close to fresh fruit rather than cooked-down sweetness. It won Taste of the West Gold in 2023. The colour alone gives away how little sugar's doing the work here.
