About this product

Casarecce originates in Sicily, where the shape was traditionally rolled around a thin rod to create the scroll and groove. That groove is what makes it the right pasta for thick, clinging sauces and pestos rather than lighter broths. Northern Pasta Co. make theirs from regeneratively grown British spelt and wheat semolina, bronze-die extruded and slow-dried at low temperatures to draw out the natural nuttiness of the grain.

Why it's BRiMM

Casarecce is a Sicilian shape, traditionally rolled by hand into a short scroll with a groove running through it. The groove is the point. It catches sauce in a way that flat or smooth shapes can't. Northern Pasta Co. make theirs with bronze dies, which gives the surface the additional roughness to hold even lighter sauces. The spelt is 100% British and regeneratively grown via the Wildfarmed network. Great Taste Award winner. Made in Cumbria in a solar-powered facility by Imogen and Matt, who started at Kendal Farmers' Market in 2022. 100% paper packaging, zero plastic.

How to use

Bring a large pan of heavily salted water to the boil. Cook for 8-10 minutes, tasting before the time is up. Reserve a cup of cooking water before draining. Toss the casarecce in your sauce straight from the colander, adding cooking water to coat. The groove makes it particularly good with pesto, chunky vegetable sauces and braises. Pairs well with Isle of Wight Smoked Tomato Pesto.
