The fusilli spiral is one of the most versatile pasta shapes, designed to trap sauce from every angle. Northern Pasta Co. make theirs from a blend of regeneratively grown British spelt and wheat semolina, bronze-die extruded for texture and slow-dried at low temperatures to bring out the natural nuttiness of the grain.

Spelt is an ancient grain. Its gluten is more soluble than modern wheat, which many people find easier to digest. Two ingredients: British flour and water. Nothing else.

Why it's BRiMM

Fusilli is the shape that holds sauce in every direction, and the bronze-die extrusion is what makes that work. Standard pasta is smooth because it's pushed through Teflon dies, which is cheaper and faster. Northern Pasta Co. use bronze, which creates the rough, porous surface the sauce grips onto. The spelt is 100% British and regeneratively grown via the Wildfarmed network. Every shape has won a Great Taste Award. Made in Cumbria in a solar-powered facility by Imogen and Matt, who started selling at Kendal Farmers' Market in 2022. 100% paper packaging, zero plastic.

How to use

Bring a large pan of heavily salted water to the boil. Cook for 8-10 minutes, tasting before the time is up. Reserve a cup of cooking water before draining. Toss the fusilli in your sauce straight from the colander, adding cooking water to coat. The spirals hold chunky sauces, pesto and baked dishes equally well. Pairs well with Citizens of Soil EVOO finished over the top.
