Soft, creamy and higher in starch than most other beans, which does two things. It makes the beans themselves melt rather than bite. And it turns the liquid in the jar into an extraordinarily thick, flavourful stock. Bold Bean Co are emphatic about this: don't drain it. The bean stock is the ingredient.
